Persimmon & Maple Pecan Overnight Oats

Sometimes, I blow my own mind with my creations. 🤯


I'd like to start by saying that every single ingredient in this recipe has an abundance of health benefits but I'm going to touch on the overlooked star of this dish, persimmons!


Persimmons:

*Improve metabolic activity

*Delay premature aging

*Improve vision

*Contain anti cancer properties

*Boost immunity

*Control blood pressure

*Improve vision

*Aid in digestion


As many of you know, I'm horrible at measuring, I eye ball everything so I'm not going to be including amounts in this recipe but I'll do my best to guide you without them. :)


The oats:

Oats - about 3/4 cup

Chia seeds - about 1 tbsp

Hemp seeds - about 1 tsp

Flax seeds - about 1 tsp

Salt - a dash

Real mushroom 5 Defenders powder - 1 serving per packaging

Joi Cashew butter - 1 heaping tablespoon

Maple syrup - about 3 tbsp

Vanilla - a splash

Oat milk - about 3/4 cup to 1 cup

Persimmon - 1 full fruit


-Mix the first 6 dry ingredients in a sealable jar

-Blend last 4 ingredients in a blender then add to dry ingredients and mix well.

-Add cashew butter and mix thoroughly

-Refrigerate over night


The toppings:

Pecans - about 1/2 cup

Maple syrup - a splash

Cinnamon - an even sprinkle

1 Persimmon


-Preheat oven to 375 degrees

-Add pecans and maple syrup to a bowl and mix until nuts are coated

-Add nuts to a lined baking pan in one even layer

-Sprinkle with cinnamon

-Bake for 6 minutes

-Top oats with nuts and cubes persimmon chunks

-ENJOY!!!
